Falafel Tacos with Garlic Lemon Dill Aioli and Pickled Sweet Red Onions
Tonight’s dinner was totally improvised based on the meager ingredients I have right now in my fridge and the pantry: dried chickpeas, wilting parsley and cilantro, one red onion, a lemon, garlic, and a package of flour tortillas. My cooking muse said “Falafel Tacos”.
The falafel was based on a Lebanese recipe made with dried chickpeas, parsley, cilantro, onion, cumin, coriander, flour, baking powder, salt, and pepper. I used my handy Egyptian falafel scoop.
A flour tortilla was topped with the crunchy falafel, diced tomatoes, homemade pickled sweet onion and garlic lemon dill aioli then a squeeze of sriracha.
The end result is really amazing. I love the crunchy texture of the falafel and was seasoned perfectly. Everything complimented each other to the sweet and sour pickled red onion , the tangy aioli, to the sweet sriracha with a whisper of heat.
Not bad for making something out of nothing.
