Make with scotch and you’ve got yourself a Rob Roy that’s even better IMHO.

Whiskey Sour for classic and Paper Plane for kinda sorta modern. Whiskey Sour, if made well has great balance and can be made in lots of variations. Paper Plane just because I like and collect amaros :)
Kentucky Mule - (go for a balanced bourbon, OF 100 proof, MM classic, Woodford, or Buff Trace), fresh lime, fresh mint, and splurge for solid ginger beer. For hot summer days, this is a great refreshing choice.
Nighttime, after dinner, nothing beats an old fashioned. I use a cane based simple syrup instead of mulled sugar cubes. Go for the luxardo cocktail cherries, they’re worth it if you’re trying to impress. Agostara bitters or woodford bitters. OF 100 proof or Woodford Double Oaked are my go to for this drink.
If you’re using high end bourbon, just cut the mixing and pour the bourbon over a cube IMO. Lol
Haha the Double Oaked for an old fashioned only. Regular woodford for the mule. The double oaked with the cherries and bitters is like dessert in a glass.
Favorite ginger beer for a mule is Bundaberg Ginger Beer. It doesn’t have quite the “spiciness” bite that others have that I’ve tried, but it’s smooth and refreshing for the summer drink. Fresh mint and fresh lime are key.
The cool thing about old fashioneds (manhattans too with a little translation) is once you understand the concept (booze + fruit + sugar + bitters) you can improvise your own.
Try various bitters: angostura, orange, cherry, chocolate, walnut
Try various sugars: Demerara, maple syrup, etc
Try various fruits: orange, lemon, grapefruit, cherry
With manhattans, swap the vermouth with plum wine or brandy for instance. Swap the cherry with fig, peach, etc.
They won't all be winners, but it's very satisfying to discover something on your own, and I can attest, it makes an impression on guests.

If you ask for an unspecified “whiskey” from a bartender, what you are served depends on where in the world you are. In Scotland you’ll get a scotch, in Ireland an Irish, in the US you might get a bourbon, a Tennessee sour mash, a Canadian, or you might get a non-bourbon “American whiskey”.
It’s a wide wide world of whiskey, and that’s a beautiful thing.

You can make your own simple syrup to step up your cocktail game. Experiment with infusing the simple syrup with different flavors (vanilla, rosemary, etc)
