I would create a lesson that makes sustainability real to them. Any local projects they can be a part of?
There is an art organization that makes incredible sculptures out of plastic picked up off of beaches, I think it was called washed ashore: art to save the sea. But there are a lot there are a lot of artist that use trash to make art and probably several organizations that have lesson plans built around that.
I also suggest looking into the great Pacific garbage patch and the ocean recovery group.
Maybe talk about the materials we use everyday; clothing, cans/bottles, packaging... And the sustainable ways these can be produced and used. Responsible consumerism.
The fashion industry has a huge carbon footprint and unstastainable practices, but is also working hard towards becoming more sustainable.... Maybe a clothing project... Have them research and design clothing that's eco friendly. Or design better packaging. There may even be student sustainable design competitions out there that you could find.
Ohhh, there are so many possibilities out there. Find what your students are interested in and then google sustainable lessons that relate. Getting young people involved in the conversation now and connecting them to the importance of taking care of our resources is sooooo important--so glad you're inspired to do this!
In environmental science courses I have taught I had students pick an object of their own that was important to them and then make a presentation and write about how it pertains to pollution. I let them use their imagination and was amazed by the breath and scope of their work. I provided them with a list of things that their project had to include. You could also use this and design it to the appropriate age for your students.

I love doing food waste audits with schools! Done this at a high school and elementary. Local counties, cities, or green orgs will usually help out and US Green Building Council will also partner with schools on this sometimes. It takes coordination with the cafeteria and other faculty but super fun, gets everyone involved, and is usually a very surprising visual of how much is wasted on a daily basis. It also gives a baseline and students like to start initiatives to bring their waste down.

Seeing this so late i hope you found a good one. An idea would be to have them bring in old tech or ewaste from their homes / families / neighborhood.. maybe even try to reach a certain goal collection as a class. Then you can or you can have them directly go drop it off to a Goodwill. In the US Goodwill is an exclusive recycling partner with Dell technologies. Dell has a commitment to collect back and responsibily reuse / recycle old tech - effort in Circularity and to keep away from landfills.
