How do deferrals work? Do I have to accept first and then I ask for a deferral?

Got an offer from a big four (which I have recently signed). But now have a much better offer from another Big four (better salary, team, culture etc). They were definitely my first choice. What are my options, should I go back on my previous signed offer, can I even do that ?
