I don't see any benefit to my life or career by being honest in these circumstances. Yeah, it might be a little bit cathartic. But it probably won't help my career, especially if the workplace is exceptionally toxic.

Yeah that’s totally understandable
There are a few ways of looking at this. Organisations execute these interviews for feedback about how to be better. Often the process is seperate from your line management (handled by HR) and so what you say isn’t shared. In my experience, sometimes people say things that are broad ranging and help the organisation, but if you’ve had no experience fixing the problems you’re complaining about, how do you expect to say anything of value, other than complain about problems? And complaining about problems is ok too, if you do it constructively. Too often people give destructive feedback which, often in my view, is based on a narrow and inexperienced view of the world, and so it gets treated with a grain of salt. The worst is when people make accusations, which must be investigated, and are not founded because they were negativities that existed in a persons mind and they didn’t address, rather than true grievances that need correction.
There are two sides to every story so think through the impact and why before saying anything at all.

Yeah I can totally understand that there’s 2 sides, for sure.
I think it’s definitely worthwhile telling a company the truth, like you say, as long as it’s done in a professional way. Constructive criticism is not a bad thing!
But I think a lot of people don’t take constructive criticism well at all, which is what I’ve had issues with in the past.
However, I have only worked for small companies that don’t even have a HR department
