I’d keep the Amex for groceries (and maybe look at another to supplement if that’s a big spend category and you regularly go over the limit for the 6% back, like the Amex Gold, which is 4% - understanding you aren’t liking to add cards, but just something to consider).
For Cap One if it’s mainly dining, you can consider a no-fee card like Chase Freedom Unlimited that gives 3% (1% less, but maybe that’s worth it if the $95 fee isn’t covered by Savor spending on dining, which requires $9,500/yr on dining vs no fee, then 4% is worth it). I can refer for that one, but I’m sure there are other cards that might be worth it.
I assume you’ll keep CSR for a while, so reevaluate when you have the annual fee coming up.
Overall, no real reason to get rid of any usually (longer history, more available credit, etc), but I’d consider dropping the Cap One and switching it for something that covers dining well for no fee.
I’d evaluate the CSR at the end of your renewal period. Downgrade the card to the freedom unlimited then if it doesn’t make sense to keep.
Just take advantage of the point redemption bonus first if you’re planning to.

The priority pass benefit basically paid for my annual fee when I was traveling, so it would have been a huge factor for me.
