I have a 1 on 1 with my boss today but have a new offer in hand. Should I cancel the 1 on 1? Planning on putting my two weeks notice on Friday.

Do the 1:1. Present the notice whenever you feel its ok. Its business as usual until then.

A 1:1 is the perfect opportunity to give your boss a heads up before formal notice. I would tell them your plan to submit on Friday, gives them an opportunity to work up a counter offer before you submit.

A1, that sounds like a weird idea..have you ever resigned that way? I've never seen that before. Your email is your notice, so having electronic proof of that is critical for date, etc. Also, typically hand in your resignation to multiple contacts...who are you handing it to physically? Are they gonna scan it to save it / share as needed. Maybe if a small company it would make more sense, but even then dunno
