Whether the work is interesting depends on what you like. At BigLaw, a lot of employment work involves wage and hour claims, which I find to be incredibly boring. Discrimination is a lot spicier.
The work is not, but the facts relating to the claims and investigations tend to be juicy in discrimination/retaliation/harassment type claims. As noted above, wage and hour can be very dry - but I find easier too. I don’t know about the hours thing. Actually I’d say employment tends to be a practice area where clients pay less per hour, so I would think you may find you have to bill more compared to higher billing practice areas at the same firm.

Definitely not the case where I’m at.
