Are you expecting your salary NOT to have deductions? If so, work a 1099 job.
Sign on bonus is not something you typically request except in the context of moving / relocation. On salary apply to jobs with the posted range you want. If no posted range is shown, do your research to figure out what the typical range is likely to be. I don’t think you need to disclose your current salary / most firms will not ask. If they do ask just say you do not feel comfortable disclosing. Not going to be a dealbreaker if they like you.
Asking for double your current salary is a big ask.. even if you can clearly justify it based on your skills, experience, and the value you bring, it's almost unheard of for most people. I would either be more realistic in your ask (still on the high side) or just start looking elsewehre. As for a sign-on bonus, just be direct and explain that it's something you need to make the transition smoother.
IF you’re underpaid and work in a state where it’s illegal to ask what you currently make, you do have a shot at doubling your income. I did between my first and second job. Second salary was maybe 40%-50% higher plus overtime, resulting in a 100% increase in total comp.
Deductions as described are perfectly normal. Has nothing to do with HR transparency. Did you think your retirement contributions and insurance were free to you? Also, your personal expenses increasing are not your employer’s responsibility. You offered your services at a price they were willing to pay.
