If you know what she likes then that would be an easy task. But I think she will appreciate anything. She's amazing after all.
I know our boss wants nothing but the best for the animals and does not mind not getting gifts. But the occasional fruit basket makes him smile, get your vet a fruit basket.

I gave our vet a customized set of scented paw candles last Christmas. She said she use it every time she goes for a relaxation.
I gave my vet a laser-engraved bracelet with a picture of her cat who recently died because of heart complications. I saw how she was so heartbroken by it and thought this would help ease her pain.
