I would address the pay discrepancy by sitting down with my boss and expressing my concerns. I would ask why the other worker is making more money, even though they have less experience. If there is a valid reason, such as they have more qualifications or experience, then I would be willing to negotiate a raise. However, if I cannot see a justification for the difference in pay, then I would likely resign.
I would sit down with your boss and ask for a raise based on your time there and amount of work you do. I wouldn't bring up what the other person is making right away as it could sour things with your boss. Of course, if the raise is still less than what they are making, it might be worth reconsidering.
This is more of a long term solution, but have you looked into National Veterinary Professionals Union? You and your colleagues can join together and negotiate for fair pay scales. https://www.natvpu.org
