100% not appropriate. How can you even entertain representing that you received a promotion that you didn't earn? If you were truly "performing at the SC level for over a full year" you would have been promoted.
If you lie and they find out they will fire you immediately. Don't be an idiot.
Again, presumably you weren't performing at the SC level since you didn't receive the promotion. You can describe what you did during interviews, but you're just going to come across as whiny and entitled if you say, oh I was really performing as a SC. Doing this would also call specific attention to the fact you weren't promoted.

Any future employer would be justified in pulling an internship or job offer from you after learning about your lie.
That's why it's important to land a job as soon as possible. It will be in your record forever, and you don't want your future employees to see that
I'm going to business school this fall and won't be coming back here. I've been performing at SC level for over a full year in a clearly laid out SC role. I was shafted for promo this year but I wanted to list my role as an SC on my resume after grad school. Appropriate or no?
If you received the promotion nod but just wouldn't be around in August to make it official, that would be a different story, but it sounds like that's not the case for you.
Then is there no way to acknowledge I've been working at an SC level? Planning to list responsibilities at level but stings to list a level below what the role actually is

Agree w D1. Also SC doesn't exist in other firms/industries, so who cares? Every firm has its own titles - what matters more is the content of what you were working on.
