If you need the money coming in, sure, it's a good stopgap. One benefit is that you don't take the work home, when you clock out you're done. A possible downside could be getting comfortable while your real skills atrophy. The work isn't something to showcase, but you might spin as a contract attorney working in the discovery phase of whatever the litigation subject matter would be.
Second this! And depending on whether the firm has you sworn to confidentiality or anything, can also be good resume keywords related to the litigation type & the firm. I once was able to leverage doc review that way with a AmLaw100 firm in a big big pharma case and then once the confidentiality window passed I was able to put the prestigious firm’s name on there too. Was a bit useful at the start of my career
It’s better than being unemployed and can be an asset if that skill is useful for what jobs you are looking for. Robert Half and Special Counsel may be good starting points.

In my opinion it doesnt look any better than being unemployed. It just looks like you needed to make money while you look for a job.
It's been a while since I've been in Biglaw, but back then it was clear that partner-track associates and doc review attorneys were different castes, and you never hired for one from the other. If you have to take it to make ends meet, then I wouldn't disclose it on your resume. Find some non-profit, etc., and volunteer with them and list that as a gap filler instead.

Not necessarily. But you don’t need to advertise it. Nothing wrong with saying you’re doing some solo consulting (especially as a privacy lawyer)
