I take notes, but I write them so it forces me to stay on task
It works for me (mostly) to take notes AND record the meeting. Asking questions helps even if you know the answer just clarifying questions. If you don't want people to know your recording use OBS. In person meetings I run it my laptop and record. You can also ask to record meetings if your on Teams or whatever.
Can vouch for notes. Sometimes on paper, sometimes if it's a lot of info I have a running Google sheet I use for just meeting word vomit. Sometimes it's super helpful for reference, sometimes it just serves as a lasso to keep my brain semi-present for the duration and I never look at them again.
Turn on live captions on meetings. See if your employer has CoPilot (can summarise meetings and actions while in the meeting among other great stuff)
With live captions are like movie subtitles and you get to read them and stay focused.

I take notes on my reMarkable so that I can email them to myself or meeting attendees after. The act of writing helps keep me focused on the subject at hand ands also lets me capture the fleeting thoughts that sometimes pop in and back out again but might be worth saying.
