I've often had up to 6 classes (45 min), 5 grade-levels on a single day. Often with no transition time between. Time management is crucial near the class end, allowing a few minutes more than you think necessary, especially for messy projects. Recruiting "eager helper" types for clean-up jobs also helps.
No, although that might seem easier, it's hard to manage, because different groups finish at different times. I use planning time for prep (making balls of clay for pots, cutting paper, etc.) Also, I have all visuals ready to change on a magnetized board and a chart paper stand to flip objectives. Students in their groups have jobs like passing out and collecting work.
I find that having a clean up bell or other specific routine that you don't use anywhere else helps to encourage students to stop!
I also recommend cleaning up early generally a minimum of 5 minutes regardless of what's out, and more if a sink is involved. I use extra time at the end of class for a rewards board and I drag it out if I need to kill time or give them bonus spaces for trivia/ review questions.
On a separate note having students use baby wipes or a paper towel and water spray bottle situation get both hands and tables cleaning faster than a sink. (Although sometimes there is no substitute 😒)
