Pastel de Atum (Cape Verdean Tuna Empanadas)
Ever wonder what you can make with canned tuna other than salads, sandwiches, and casseroles? The Cape Verdeans use canned tuna to make empanadas called Pastels.
Cape Verde is a Portuguese speaking archipelago nation on the Northwestern coast of Africa. Half a million of its residents are scattered across the 10 archipelago islands. 90% live on the main island of Santiago.
It’s considered a tropical paradise and is a popular hotspot with Europeans. Cape Verde is the equivalent to the European Caribbean.
Cape Verde cuisine is a mix of African and Portuguese cultures. Pastel de Atum is the perfect example of the mingling of the two cultures. Canned tuna is sauteed in olive oil with onion, garlic, parsley or cilantro and Sazon seasoning. Variations include the addition of eggs and peppers. The filling is encased in a fried flakey and crispy pastry.
My version has all the above ingredients (with my homemade Sazon seasoning), mixed vegetables of carrots, corn, peas, tomato puree, and a healthy dash of sriracha for some heat. I baked the pastels instead of fried for 20 minutes at 400F. This is not traditional Cape Verdean but a side of my creamy coleslaw makes the perfect complimentary side.
I’ve never been to Cape Verde but after eating these pastels, I think I should! They were scrumptious and I am sure the rest of their food is too!
