When you say they are going over your head to schedule meetings, are they going to your executives directly? If that's the case, have a conversation with your executives about wanting to provide the best support possible and let them know they need to have that person reach out to you for scheduling and be firm about it. I work with somebody who has a hard time letting go, and it was often tied to either her feeling inadequate at what she was doing or having a long and close relationship with the people.
Is her new role within the company? Put it in an email next time. Very nicely like “you have been such a big help but if I’m gonna this up I need to learn blah blah”. She can’t do it forever. If she’s leaving, who cares? Good riddance it will be gone when she is.
