The strangest “VIP” request I ever got was from a regular who insisted their table always be set with a specific brand of hot sauce... like, we had to keep bottles hidden just for them. They’d also demand the same server, same booth, every visit. I get catering to regulars, but this felt extreme. It became this weird ritual the whole team had to participate in. Where do you draw the line between good service and enabling?

I think it depends on effort versus impact. If it’s harmless and easy, sure. But once it starts draining the team’s energy or disrupting service, it’s not worth it.

What if that server wasn’t scheduled? There’s just a lot of “ifs” here, and that makes it hard. The more important question is who that person was and why they had gotten all that in the first place.

I mean I think regulars should be treated well - it’s said that 20% of regulars make up 80% of a business. If they’re paying good money and they’re nice about I think they can be treated better than you average joe. But if they end up being a jerk about it then it’s time they were told to behave or get out.
