Sweet potatoes!! I got introduced to including them in my diet about a year ago and it's now such a abig staple that I can't go two days without it. It's made my gut health and constipation issues so much better, and it just feels so good in your system. Only other carbs I do are well.. real potatoes and pasta ocassionally.
Seconding M1. Potatoes are great carbs, don't let anyone tell you otherwise.
Potatoes are great because they are so filling. Also I use a lot of the same carbs, rice, pasta, but making sure to find the whole grain versions now. I just got a bag of lentils I’ve been trying out mixing in with things. I’d start by swapping a few things here and there and see what you like the best.
