I wouldn't do it. The consulting work is usually on the "business" side of education, so it may ruin your passion for the space
I think it's important to remember what we mean when we say "business"-side of education. No one wants to work for the University of Phoenix. But curriculum and assessment providers, instructional tool designers, operating non-profits, impact investors, SEL curriculum providers? The education market is huge, and because it inevitable is trying to sell to mission-driven stakeholders even as a for-profit company, it can still be personally meaningful.

Guild education - small boutique firm that does education strategy
A lot of Boston based firms in education. I'm honestly not sure of boutique firms with offices in NYC

Check out Huron. They do a bunch of higher Ed consulting. Some of the work is ERP focus, and the other is a combination of strategy and guidance for university offices and admins.
