I would do Sedona over Scottsdale any day. Sedona is amazing but not a whole week. You could do AZ in general and move around.

Yes, and honestly, it was pretty underwhelming. I would suggest Santa Barbara over Scottsdale.

In January? I would definitely pick Scottsdale over Santa Barbara. Santa Barbara is beach and tourist crap and in January it will be cold. Scottsdale, golf, swim, nice resorts at reasonable prices, tons of hiking, shopping, museums, food. Source, I’ve been to Scottsdale in January 20+ times and I’ve been to Santa Barbara dozens of times (less in January specifically).
It's really more of a long weekend destination instead of a whole week.
Tourist stuff like old town Scottsdale (artsy shops and restaurants), Taliesan West (Frank Lloyd Wright's home), some nice easy hiking areas and parks. There are also some great spas for massages.
I could easily spend a month at the Biltmore. Just sayin’
Jan is a good time to go.
Only way this is a week long trip is if you play a lot of golf
