Do it. Don't worry about using a VPN and when you go to the bathroom, ask someone at the table next to you to watch your stuff. Let us know how it goes.

If it’s 11:30 pm and it’s jumpin’, jumpin’ it’s a bad idea.
I have worked in all sorts of situations, don’t know why not. I’d rather bring my laptop, work for an hour at a club/ restaurant/ bar/ beach than not go at all.
Should be fine if you have a screen protector and can leave your laptop in your car when you’re done or another safe place. Usually you can always sit in such a way that no one can see your screen.
Depends on the venue and country. If you can only park your car on the street, obviously don’t leave anything in there. If the venue is in a private area and parking is under surveillance, probably not that risky.
We’ve left our laptops at coat checks as well (with partners present). Doesn’t have to be the car if you find a suitable place.
