I'm de facto vegan because my girlfriend is, and we usually have meals with chickpeas, all kinds of beans and lentils, tofu/seitan/tempeh and lots of vegetables, and sometimes the processed stuff. We make curries, stir fries, pasta dishes, soups, burrito bowls (which are 10/10) and other things. She's a great cook and had taught me a lot, I think you really need to know how to cook and season well otherwise you'll be eating bland Tofu and want to die lmao
It's really not so bad, just try out a few recipes and you'll be the envy of your friends in no time :>

I make a lot of soups and freeze because I don't want to cook daily. I do Purple carrot meal kits.
I agree with DE1! You need to know how to cook and season well as there are many many dishes that you can make. Take a look at plant-based options in the store.
Have you tried brands like Gardein, Boca, Morningstar, Follow Your Heart, Ciao, Diaya, Violife and Violite? If you know how to season things well (sautee with onions, bell peppers, garlic, mushrooms and toasted sesame oil) - you can do wonders with dishes.
DE1 summed it up pretty well. I eat a lot of similar stuff, also swap in chickpea pasta for pasta dishes, and chickpea pizza bases, make my own “health-za” as my son calls it. i make my own seitan and mix up some flavors with that for more spice or more “chicken” or “beef” taste I also happen to be an avid weightlifter and cyclist. Don’t let anyone tell you that vegans can’t achieve gains.
There’s a million great vegan recipes out there and people to find on Instagram. Can share a bunch of handles but this guy consciouschris does a hole series called “Lazy Trader Joes Meals” that are vegan but not necessarily health-focused and Soooooooo good and quick. Thatveganbabe, plantyou, nomeatdisco, all pretty good as well but in very different styles.
