You can add shredded cheese to a tortilla and make chicken quesadillas.
Make some brown rice or quinoa and add chicken and salad for a burrito bowl. You can do black beans & corn from can.

Protein, vegetables, grain.
Protein: I like to bake 2 - 3 large chicken breasts or lean fish fillets (things like cod). I prefer lean protein as fattier protein can throw off my macros. For fish, I bake in a foil packet with a few aromatic items (lemon, dill). For chicken, I season then bake. I like the chicken baking method at this link, though I normally find that I need a longer baking time for her suggested temp of 450 degrees - typically 25 - 30 minutes instead of 15 - 18 as she suggests: https://www.gimmesomeoven.com/baked-chicken-breast/
Tools needed: baking dish or heavy duty foil, meat thermometer, mixing bowl, basting brush if you’re following the chicken instructions exactly (not really needed)
Vegetables: I roast a few different kinds. My favorites are cauliflower, brussel sprouts, sweet potato and butternut squash (though avoid the last two if you’re cutting carbs). Do zucchini if you want something FODMAP-friendly. Basically, toss in olive oil, season, spread on a baking sheet, and roast. Tools needed: baking sheet, mixing bowl, foil (I like to foil my baking sheet before roasting as it makes cleanup easier)
Grains: I do a batch of white rice. I like to rinse the rice first, then do 1 cup of white rice and 1.5 cups of water. I boil the water before adding the rice, then simmer for about 20 minutes, then take off heat and let sit for 18 minutes. I read a tip once to put dry paper towel sheet in between your lid and the pot while the rice sits to ensure you don’t have excess moisture and have found this works well.
Tools needed: saucepan, strainer (for when you rinse the rice)
