Probably not an intuitive answer...but go to Boulder! It's about 45 min out but wonderful air, mountains, hiking, etc. Check out Pearl Street and you'll come across Brasserie Ten Ten and the Med, which are both great. I'm from Boulder so I'm obviously biased. Denver is clean and fine but I always found it a bit contrived? Boulder just felt more like a distinct cultural hub. Felt like any other city to me - but Coors, Denver Mint, and Museum of Nature & Science are a few fun things in the area if you're into any of those
I second everything B1 said about Boulder!! I'll also add for that restaurants around LoHi are very good and there are a ton of craft breweries around to check out.

Torchy's Tacos and Boney's BBQ for lunch. Buckhorn Exchange for dinner if you want the full Colorado experience. 16th street is cliche but may be worth checking out for a first timer. Rooftop bars near Coors Field if the weather holds up.
