If you're looking for structured learning, Microsoft offers free courses too! I'd look for free stuff before paying for anything

There are excel courses available on LinkedIn Learning.
I am not an expert, but when I started I only knew basic functions. Most of our work papers are excel driven. When you prepare the work, you will first just copy/drag formulas. Then, with time, you will get more comfortable with building your own. Experience will get you there. I watched many videos to learn but I do not think that for me it did the trick. What helped was when I needed to create a work paper from scratch and to build formulas, watching videos then, and putting stuff together helped improve the excel skills.
