There's not much transferable from EE to Product Management. You could look for free online learning to get a conceptual grounding in PM work, but there's a lot of experienced PMs on the market right now, so competition for you would be stiff.
I would recommend leaning into the data science angle to get into a team and learn from PMs while doing data science as your primary role.

You can network within your University Alumni, and learn on online. It will both be helpful.
I am not familiar with what electrical engineering involves, but I would say apply to those types of companies or a company that builds technology for those type of companies. Apply for a role that would interest and once in, if there are product managers you can learn from them and make an internal transition later on.
