Museums and restaurants are the only good things in this city. If this trip isn’t happening for other reasons I’d pass and go someplace else.
I think the Downtown tunnel system is kind of cool and unique to Houston. There is a whole underground tunnel network in Downtown accessed through several of the high rises. Lots of good places to eat. You can also get a really good walk in. Don’t worry you can’t get too lost.

BBQ, the Menil Collection and that area, and I ran out of ideas 😄 If you catch the rodeo, it would be fun to watch too.

The departures terminal of the airport is the hottest spot in town. Kidding, probably not great that we're all shitting on Houston as you're planning to visit.
There's a number of cool art museums, if you've never had Tex-Mex, highly recommend trying some high-end (e.g., Superica and Goode Co) and some of the more authentic places such as Candente and El Tiempo depending on how long you're in town for. Also, recommend some BBQ at either the Pit Room or Pinkerton's.
There's also this really cool place called the Color Factory which seems to be a lot of fun. If you enjoy shopping, the River Oaks shopping center has a lot of really nice high-end retail shops, City Centre has more affordable ones, and the Galleria has a smattering of both, but will have considerable foot traffic.
But in terms of outdoors and other affordable things to do, consider some of the walking trails, the one that cuts through the historic heights is pretty cool and there's some places you can stop and have drinks or even grab a bite to eat. Memorial park is also probably hands down the best thing Houston has to offer, which includes a pretty cool arboretum next door. Enjoy!

Rodeo, rodeo, a thousand times rodeo.
Great restaurants, great museums, great multicultural environment. About 146 languages spoken. Check out Midtown, Rice Village. The city is huge…you will need a vehicle. How long are you here? The Houston Livestock Rodeo is going on now- this event is filled with concerts, great food (Texas barbecue )this event is a huge fundraiser for raising money to provide scholarships for students interested in agriculture/science etc
