This industry has alot of people in your same situation. Even without the felonies, im also trying to find work, and ive been doing this for 21 years now. Advice I was given a long time ago from the guy I loathed the most: never stop cooking.

First IM PROUD OF YALL FOR PUSHING THROUGH. I said at a young age that id rather be broke and doing what i love than rich and miserable. So im happy yall are still pushing through.
Yes, create on socials ESPECIALLY YOUTUBE to make your own side money. Things are definitely expensive but PLAY, practice, and hone what youve learned in school. Watch youtube chefs ( real ones) for ideas you can play with and tweak to your own recipes. Idk where yall live but im in houston.
There is some companies that have helped me regardless of experience, placement of tattoos, and whatever record. Friends That Cook, Chefs For Seniors ( they have regular clients too not just elders), Tuxedo service company ( shift based around your availability, if you do have tats they allow you to cover up, and its foh service that allows consistent raises), Host staffing ( boh thas also flexible and they work same events as foh, and can get you a full time job if you are reliable), and lastly Aramark ( they work in stadiums and pay EVERY WEEK).
Try them out, see if they are available in your area if you arent in texas/houston… STAY STRONG, CONSTANTLY PRACTICE YOUR ART, LEARN ALL YOU CAN ON YOUR OWN, STAY BLESSED & POSITIVE!!!! So many places need passionate chefs/cooks instead of ppl that are just there for a check. Yes we need money but food is life, brings people together, healing, comforting, and creative. Dont give up or in. Hope this info helps my fellow Chefs 💙🙏🏽🔪

I gotta tell you, the best thing I ever did for my career, the one job that has opened the most doors for me was doing one year at Waffle House. After working there, I was immediately hired into just about anywhere I applied, culminating into an upscale restaurant in Nashville that got me into the fine dining scene.
