It is easier to be mean and curt. You have to put in time. Show them your human side. Take them to lunch. Explain kindly why something is not to your preference. If they’re too afraid to come to you in general, they will be scared to come to you with good ideas, contrary authority, or—worse—to bring a mistake to light. You are a better manager when juniors and interns feel comfortable communicating with you.
PS it is a good sign that your reaction was to be introspective and seek input on how to improve! Good luck!
You have to understand that no one wants to do a bad job in this field. Your perfection might not be perfect in someone else’s eyes. It’s about shifting your perspective to another person - and in case of trainees, explain the reason behind certain asks/changes. If you don’t have a reason, own it up that you are just particular about something and that it’s a mere “preference.”

On the flip side, have THEY asked how they could be more competent…
You can still expect efficiency while treating others with courtesy and respect.
Since they say that you scare them, what tone are you using with them? What demeanor are you displaying?
Perfection in the law is ridiculous. No purchaser of legal services demands perfection. They want their deal done or their problem to go away.
Clients have no way to judge if work product is "shoddy" beyond basic grammar and punctuation. They simply want results abd for their issue to be resolved as quickly and efficiently as possible. Any client who wants to judge your work product has spent too much time on the internet and is likely more trouble than they are worth.
A better balance of constructive criticism and recognition goes a long way. Interns are also probably not the best measure of your “scariness.” If experienced attorneys one level below you are afraid of you, that’s a better measure of how you carry yourself. And finally kudos on being self aware. Some attorneys would find it funny that the interns are terrified.
