A job doesn't set your career trajectory, your results do. A person who "does their job" is a commodity who is dispensable. A person who delivers exceptional results is a valued asset. They're the ones who get recruited, promoted and make bank!
My first job in sales didn't really shape my trajectory, but it taught me a lot and set me up reasonably well for a career. I'm not sure where you work matters as much as how much you bring to the job, meaning how hard you're willing to work and how much you want to learn. If you've got choices in this job market you must come across as a strong candidate. Chances are you'll do fine wherever you land.

I was in sales support, and it taught me I did not want to be support staff.
It shapes your instincts but doesn’t define your future. A high-structure job builds discipline; a scrappy one builds adaptability. Either is valuable long-term.
I would go big co every time. You learn about why they are big, process, people and politics. Get that behind you then go smaller if you wish, big co is on your CV and will open many more doors.
