This sounds like admin work. If you’re unhappy with litigation, consider a different practice group or explore potentially shifting into an admin role.
Is there a job or position that encompasses what I’m describing? Am I literally just describing a law firm owner??
You're describing a partner or a solo.
....but just stuff a partner/solo does on the side, right? Because they're still doing actual legal work too.
That sounds like what our business manager does. Definitely not a JD and doesn't get paid anywhere near a JD.
Or try in-house. You normally don’t take depositions, though you will still prep people for depositions, and possibly defend some where your company is a third party. You end up doing a different kind of litigation grunt work still (shepherding document collection).
Consider a practice manager in big law. That’s exactly what you are describing.
Consider a business professional role like attorney development, legal project management or client development. I was a litigation attorney who got burnt out from family law. Went in house (which I loved) and transitioned to legal project management. It’s a great fit for me although I miss litigation.
