I've been interviewing with some companies, and now I have to decide between JPMorgan Chase and Globant.
Globant is more innovative, and has remote work. I will enter to work with a Sillicon Valley startup based in San Francisco. The tech stack is React, Nextjs, AWS, and a serverless architecture.
JPM is semi remote, and less innovative. The tech stack Java, SpringBoot and AWS. But I'd do more migration tasks, like dockerize projects and pass them to kubernetes. What would you choose?

I don't agree with your analysis that a larger company equates to more job security and less stress.
I worked at two large tech companies in my career, and while the stress can be different between big and small companies, they both still can have stress. And, when it comes to job security, I often saw those big companies use layoffs as a way to lower their operating budget and boost stock price. It is true that at some large companies you can 'keep your head down' and expect to keep your job, but that is becoming less and less common as managers are being told to find more and more people to let go.
Personally, I have seen much greater rewards working for smaller (less than 1000 people) companies. For example, I saw minimal raises and almost no bonuses when I worked for larger companies. Almost all of my salary growth has come from working at smaller companies. I also find many of the other benefits are better at smaller companies (insurance, bonuses, PTO, etc.).
Rising Star
You have to be uncomfortable to grow. You need to improve your communication skills and stand up for yourself if necessary. Most important is addressing things immediately and finding common ground.
When I move to another position it's usually 50-50 of what I already know and don't know. The don't know part is where I learn. Good luck 🤞

To sensitive and afraid? First, do a retrospect of your life, you must have had some bad times, and you've gotten over them. Either with success, or at least you crawled out at the bright end of the tunnel. But you did. You must have acquired some friends and acquaintances and colleagues who think the best of you and value you.
If that's not sufficient to help you with fear and sensitivity, then go to see the dentist for the soul :)
Remember that fear is you worst enemy and growth-stopper. After that, remember that comfort zone killed even more dreams and progress than fear.
