Outside of the internships, I cannot think of much that wouldn’t be your entry level positions.
If you can get into a machine shop as an operator, that could be good. Show you know how the machines work, what is machinable and what is not. Things like that. It could get you some time with CAM software.
But I have been involved with hiring entry level and let me tell you where the challenge is on the hiring side.
You’re all identical.
You all have the same course load, same months of relevant experience. All have your capstone. Even most of your resumes look the same because they were worked on together under the same guidance.
You need to find your strengths that speak to you and highlight that better. Stand out in ANY way. Even if it is just rewording the resume or better explaining how some of what you excelled in is more relevant to the job you’re applying to.
I’ve seen several positions on indeed, your resume may be getting kicked out of the system due to not having key words. I’d be happy to take a look at it for you and give you some feedback?

Your best bet is to try getting a job at a small company or a startup. After 2-3 years, you can look at bigger companies.
Study the job description and tailor your resume so it becomes a good fit for the role. Some of the roles would also require a particular skill(s) so it may be worthwhile to learn/hone them on the side. I also suggest to go the extra mile by researching and reaching out to hiring managers to get to know more about the role and to "sell" your skills. There are also freelancing sites where you can do small projects which you could add as real-world experience.

Could I apply for those positions also? And if so where should I send my resume?
I have no direct evidence, but I would think applying overqualified in technician positions like a CAD technician or Drafter might be a good way to get a foot in the door, and then seek a rollover to the engineering side after proving yourself in the first year or so

What are your interests in Mechanical Engineering? What area of schooling did you find the most rewarding, or the most interest? I would suggest you pick a field of study and look into further training, kind of like earning a trade. Just having a mechanical engineering degree in todays world doesn't always guarantee you a job. You have to have some skills in order to be hired nowadays. Why did you pick ME in the first place? Try to find a trade and excel at it. I also suggest you get your PE, have you passed the FE exam yet?
I've been studying for the FE heavily these past few months (trying to work out the rough stuff and assure that I'll pass). I just need to do the practice exam and schedule a date.
I've done well in the thermal/fluid discipline and CAD in school and put it into some practice during internships. I do like MEP/construction, quality, and design work, just having a hard time getting a more permanent position in one of those areas.
