If you're not willing to be flexible, it's not for you. You could book at open a year in advance if you're good with that. Otherwise, flexibility is key.
For Chase, Hyatt is easy enough except for the very popular properties.

Would recommend using Seat.Aero 's pro version to quickly aggregate and search award tickets. Gives you the ability to search multiple departure and arrival airports, plus or minus # of dates from target date, by airline alliance and by credit card program. Also breaks out the taxes, which is helpful for comparing flights from Europe back to the US or US vs foreign carrier for going over to Europe (ie Delta ~$7 vs Virgin ~$70 vs Air France ~$120 ). Recently used it to book JFK > PRG and BUD > MIA. Honestly the $80 saves a lot of time going to each individual airline.
Nevertheless, you have to be flexible with your dates and may have to buy a ticket to reposition to a larger airport (ie JFK) for more award availability.
