That’s a straight up conflict. I’d have not started when i did, or id keep my mouth shut about it and finish my business ASAP.

The invisible man isn’t anyone as long as you stop advertising that you’re making side income on public platforms. Otherwise, I’ve seen people with their own consulting gigs do whatever.
You wouldn’t be the person who determines conflict, and they will find conflict with everything you want to do stating it “subtracts from your performance at the firm” which is not in their interest.

OP, we have a policy on earning additional income and what is allowed and not. It gets complicated in some cases, especially those involving IP. I would review the policy and possibly do a consultation, so neither you or your business idea is problematic.
It's their business because their business is literally buying your expertise and renting it out to other people. If you're also putting that expertise out on the market it undermines their ability to do so, reducing the value of the asset they are paying for (ie you).
That said, some outside activities don't interfere like that (e.g. you want to do some work in a totally unrelated field like selling something you make as a hobby) or can increase it (e.g. doing pro bono work or teaching).
I run a travel blog that has ads on it. I ran that through Independence and there was no issue.
Firm should have an explicit policy on this, likely does. For us, we’re not allowed to leverage the brand name to make $$ (e.g., doing paid case interview prep) or do anything that resembles consulting work, but an unrelated startup would be fine.

Adhere to the independence requirements if you are at a Big 4. Other than that, why is it any of my employers business what I do after hours assuming it is within the bounds of the law and would not damage firm rep
You can work a side gig as long as it doesn’t conflict with what you produce for your employer. For example, if you work for a company that does heating and cooling systems and on the side you are doing your own HVAC work, that is grounds for termination. If you do it at a consulting company, they can sue you for all of the money you should have directed to the company to earn. So, you can have a real estate business, do carpentry, have an Etsy business, but if you are doing the same work that you should be doing for your employer, plan to be reprimanded, sued, or terminated when they find out.

Go through independence. I did everything over email and am fine. I set-up VOIP phones for small businesses and I’m the only owner.
When there’s partnerships is where it gets weird I’m told.
