Have heard a lot for different opinions on these. The logic is that it’s easier because there is a lot of supply in cities like NY, Chicago and SF, but the counter argument is that the offices with less supply are also way smaller and have a lot less demand.

If that's a priority for you sure. My now wife and I never had that convo while dating, and she knows exactly what we are worth today now that I am making double what I did when we met.
You should already know their salary without needing to talk about it (eg based on occupation, industry, job title on LinkedIn). What I’m trying to figure out instead is how much assets they have - do they invest, have other income streams, are trying to set up other income streams, are they hustling just as hard as me, and so on.
We didn't discuss until we were seriously dating (maybe at least a year in)
For me though, more important than numbers is attitude towards spending/saving and how responsible they are - somebody who doesn't make a lot of money but is disciplined and has good habits was better than if they made six figures but blew it all on shopping and didn't know how to save/invest. And you can figure that out early on
