I’m an 8th year at a V5 and I almost never cancel. You have more support the more senior you get as in you can typically push it down to a mid level or junior to push it forward and you review when you free up.

yeah I think the answer to OP’s question heavily depends on (1) your level of seniority and (2) the culture and size of your group.
Learn to work from your laptop and get a WiFi hotspot. Sometimes you’ll have to cancel but more often you can go to the dinner and maybe you have to open your laptop, maybe you have to answer emails from your phone, maybe you have a nice dinner!

On the weekend, I can usually keep plans, and if they’re actually important (visitors, birthdays, expensive tickets, etc.) I always keep them. I never make weeknight plans

No weeknight plans and if there's something bubbling during the week that could potentially disrupt the weekend, let the partners know when you will be out of pocket over the weekend - although this is highly dependent on team culture.
That's how it works in my team and the partners respect the associates' weekend plans as much as they can.
