Just depends on how egregious the skipped leg is. If it’s like SFO-DFW-AUS, you’re probably fine. If it’s like SFO-NYC-Puerto Rico and you’re skipping Puerto Rico, I would say they would raise a flag.
K1, that's a solid idea. Didn't think about that.
It’s just 1 flight you’re prob not getting that much in benefits.
In any case, I highly highly doubt United will come after you or your status even if you do it repeatedly. Worst case you save thousands doing it multiple times and end up with no status, which isn’t that bad.
The airlines have significantly clamped down on hidden city ticketing in the last five years and have applied harsher penalties for doing it. Losing status in one year when you may be traveling less might not hurt too much, but you could lose your entire frequent flyer account and/or lose both status and all the miles you have, which could hurt a lot more.
There are plenty of tales of woe on forums like over at Flyertalk where people have violated rules (selling miles or awards is another common cause) and lost all or a great many miles, or the whole account.
You know from experience or what? That’s big confidence to have without any proof

I’m not sure who you are doubting but there’s plenty of stories on FlyerTalk and blog posts -

one time and you are fine, even once per year and they won’t come for ya
