Saigon Trail

Cowles mountain. The view from the top is amazing!
The main Cowles trail on Goldcrest is the worst. So crowded. Take the Mesa or Big Rock trails instead. They connect at the service road near the summit and are usually empty or low traffic.
I also recommend heading on to Pyles Peak. It's also much quieter. Most people stop at Cowles.
Lake Poway, Potato Chip Rock
Los Penasquitos off of Black Mountain Rd, Iron Mountain and Potato Chip come to mind.
Way Up Trail Elfin Forest
Cowles, Fortuna both of them same trip, Cuyamaca, Stonehill I believe it's called across the street, Iron Mountain, Mount Laguna meadow and surrounding peaks, couple places in the Anze Borrego Desert, El Cajon
Corte Madera. Mt. Laguna area. Mission Trails (try Kwaay Paay for leg burner, or combine N and S Fortunas). Iron Mountain. Mt. Gower. Anza Borrego has tons of great places. You can also section hike the Pacific Crest Trail.
SD county is big and has more diversity than you might expect. Most of the best hiking spots will be 1-1.5 hour drive (e.g. in Anza Borrego), or possibly more depending where you live (they are more to the East).

The one that has a permanent spot in my favorites list is Cedar Creek's Falls to Devil's Punchbowl. Nothing beats taking a dip after a good hike.

It's nice and flat and chill. Super green right now. Caution that you may run into water patches coming from the equestrian staging area off Mast Blvd. Should be fine coming from Old Mission Dam, which is also more scenic.
The 5 peaks in Mission Trails are great and close to the city. My favorite trail would be hitting both North and South Fortuna.
A little further out is Iron Mountain. That is my favorite overall that I’ve done.
El Cajon Mountain is probably one of the more challenging hikes in the area (maybe the most challenging), so if a physical challenge is what you are looking for, then that's a good one. It's also relatively uncrowded and has pretty decent scenery etc. It can get hot -- bring plenty of water!
I love going to the Mount Woodson Summit. They're known for the Potato Chip Rock if that rings any bells for you.
