I'd have to say the environmental services workers. They don't get a lot of recognition, and their jobs are pretty much thankless. But what they do is essential, and if it's not done, or if it's done ineptly, it can have catastrophic consequences.

I agree with Northwell. I was going to say anyone who works in any kind of job that involves cleaning, because they keep us safe and often dont get the respect they deserve.
The most under rated job in the medical field is Phlebotomist. A doctor can not diagnose, monitor medication, or release a patient without blood work. We attended a special school, received specialzed training, and depending on the state are licensed. We have many techniques, have to remember the order of draw, timed tests, etc, all while making the skill quick and easy. Yet phlebotomists are overlooked and considered part of the lab and not medical professionals. Please. The lab is usually inside the hospital, phlebotomists ARE medical professionals.
