This time of year, I start to lean toward salads. I haven't been eating as healthy as I usually do and I can feel it every where. I've just been too busy to food prep and the price of groceries has gotten out of hand!
Salad with a lean protein. Then maybe a sweet carb as a little treat for eating healthy. 😝
I start my week with such good intentions when it comes to planning to eat healthy and plan out my lunches...but life always seems to get in my way and fail at this goal pretty hard lol. I often run out the door without making my lunch so I either grab something from the drive-thru, order doordash, eat a protein bar or skip lunch altogether because I am just to busy to stop and eat.
This week I meal prepped making curried lentils and basmati rice. It was tasty, spicy, and full of protein. I need something more hearty than a salad.
My favorite is a homemade salmon burger on a gluten-free bun with baked sweet potato fries. It's my favorite to make because it's a healthy take o a childhood favorite.
