I want to build my career in analytics. I have offer from EY India, EXL and LatentView Analytics.
EY is more on the side of project management and process improvement in SaaS, as told. While there is hands-on in other two.
If I don't consider pay, which company is the best to go for considering work and culture(peope friendly).

ZS1- Not sure what you mean by that. I have worked with ZS for 6yrs and moved to ACN Strat for another 2 and then Mck. I rate ZS as the least impactful and insignificant among all. I also know wlb and day to day work is highly comparable. Maybe your perception is India specific and biased by comp but each of these firms have a strategy arm that equally good or better than ZS so its very much an apples to apples comparison.

Home grown C will get 21-25 lpa (fixed)
A lateral hire C (with MBA) will get 25-28lpa (fixed) + 6 lacs joining bonus
I am not from the colleges mentioned above. But at AC level, with 3 years post MBA experience my JB was 5LPA. They do it attract talent.
Starts at 21lpa and may go up to 30lpa depending on seniority. This is for BO/DA/BT. Obviously ADS is going to be way higher than this.
C doesn't go upto 30 unless you're a special case (8+ cycles or lateral hire with v high comp)
M starts around 30 so ZS maintains some gaps between the bands
