I think it's great to see the progression of design or art direction from concept to final output, depending on the project.
In this scenario, I would say it's fine to show your conceptual thinking and designs alongside the finished work. As long as the end result didn't actually become a different idea.
Or if you just want to show off your design skills, then include your versions only. Who cares if it went live or not
IMO, nothing wrong with showing your process with a short description, if you’re proud of it and feel it’s “book” worthy.
Design the best versions of the work even though some may not be the real final versions, it’s your book, you decide what you want people to see.
You can put your own version. It's like the director cut.
