I was just offered a CUNY role. The title is Higher Education Assistant. According to Glassdoor, the average annual pay for that role is $83,418. However, I was offered $62,500. I requested for the minimum annual salary to be 75k. Does anyone have experience navigating the CUNY system and their pay?

Where you live should make very little difference on what you should ask for. Let me explain, what you’re saying is you don’t live in a high cost of living area, that doesn’t mean you shouldn’t be close to the middle of the range. What is your experience level? What is your education level? What should you be getting paid in the role based on those two items and your level of experience?
OP you are correct I’ve seen that. Some do some don’t. But from what I’ve seen the bands themselves aren’t that far apart and if you find the middle of all of them then you’re OK. No matter what you’re area.
It could mean that the ranges are based on some sales element.
Location matters (as well as other factors).
The job is probably being posted with a large range because they are willing to hire in many locations. Based on the applicant's location, that range will be narrowed. Also, remote positions can earn less.
There should be city websites where you can plug in your info (location, role, level, etc.) to find the comp range.
