Once you have one lined up, you might as well take it. A few years ago I wanted to cancel an interview, took it anyway and the firm ended up offering a huge signing bonus. You never know.
Only interview if you think you'd consider an offer if it were made. There is no reason to waste anyone's time.
I think it can go both ways. If you're 100% not going to accept the offer, you might not be as enthusiastic in the interview as you would if it was something you were really excited about, or you could say something that might make you appear disingenuous if you then immediately accepted an offer elsewhere.
If you think you'd possibly consider an offer from the other firm also, definitely take the interview. You could always use multiple offers as leverage to get a signing bonus, guaranteed annual bonus, and similar.
