Why is there no way for me to advance to assistant kitchen manager? I have the experience but not the former title. I’ve run kitchens before and done managerial level work yet no one wants to hire me as an assistant manager because I haven’t been one yet.

Have you tried asking your manager? Sometimes it helps to sit down with your manager and let them know your career goals so they can help you work towards them. I would definitely ask your manager why they think you haven't moved into that next role.

It takes time and you have to game the system a bit.
It took me over 10 years to get to Sous Chef.
Then another 7 Head Chef.

I work as an AGM in a busy restaurant. Been working there for just over a year, and haven't had a single raise.
