This was wide style dan dan noodles. I felt like this place used more peanut butter which is a good flavor but I like my Dan Dan more spicy.

Has anyone made their own Dan Dan noodle ?

Had snow crab leg clusters. Had guests squeamish about food so visibly reminiscent of the source critter, so I picked the legs and body to make crab cakes. Riffed off the Maryland crab cake recipe from Serious Eats. Served as bowls with jasmine rice drizzled with kecap manis, garden ripe cherry tomatoes, pan fried summer squash, and steamed edamame, lemon wedges on the side.

Pan fried Cajun spiced Barramundi. Roasted broccoli. Should have been on a bed of sweet potato mash but I was too lazy to mash. 🥹

Chef tip: if you have an air fryer and want perfect roasted veggies, toss them in a bowl with olive oil+your seasoning. That way they’re more evenly coated for going in the air fryer.

I tried poke from Costco. It was ok, not the best flavor. Has any one made their own poke before?

Built fire in smoke box to cook chicken legs in more direct indirect heat. They cooked up in about 15-20 minutes, then I put them over flame to crisp and char. Simple - just salt, pepper, and olive oil. Chunk hardwood charcoal with a split or two of hickory. White sweet corn in foil pack with salt, pepper, and ghee, cooked until subtly charred.

I’m kind of at a loss of inspiration for how to season chicken. Please give me any recommendation for chicken season

I attempted to make miso cod and didn’t really work out lol.

I followed this recipe for the ingredients but I did not let it marinate long enough. So I would honestly tell you to marinate it for 3 days for sure. more

Here’s the after it’s cooked of the nabe Mille-feuille. I served this with a nice bowl of rice!

The soup base I used to cook this with was dashi with some mirin and soy sauce. Simmered it until the lettuce was tender.

I also used a yuzu dipping sauce to bring it that refreshing pop
