Make up any spice paste you want. I tend toward SEAsian flavors - garlic, ginger, lemongrass, lime, chilies, black pepper, coriander seed, cilantro root & stem, fish sauce, etc.
Leg quarters are best. Slather your pieces of yardbird in the paste. Let sit in fridge 30-60 minutes. Wet the bird with salted cultured buttermilk and let marinate 1-4 hours. Wipe bird clean. Film with oil and grill hot & fast using indirect live fire. Chunk hardwood charcoal and maybe some fruitwood hardwood. Go for 350°-450°F. Cook to 160°F internal. Crisp up over direct flame as needed.

A really simple marinating method I learned years ago is to get a can of chunk pineapple. Put the chunks aside and pour the juice in the can into a bowl. Add some soy sauce and cooking oil, just so the stuff will stick. And marinate some chopped up chicken breasts in that. The longer the better, but any time will do. After marinating, put the chicken on bamboo skewers with the chunks of pineapple and grill them over charcoal. It's simple but delicious.

I do garlic powder, onion powder, paprika, salt and pepper with some olive oil, if you want to add any herbs of your choice, I sometimes do rosemary or thyme, I have also done herbs de provence and it always comes out great!

Honestly OP you can use just about anything on chicken. I like to put ranch seasoning on chicken sometimes and bake it. Or a recent fave is panko, mozzerella cheese and Italian seasoning. You put like a TBS of sour cream on the chicken and then put the topping and bake it. It is sooooo good.

Oh I never thought of putting sour cream on chicken and baking it. I’m assuming the chicken is super juicy and moist?
