I love using up all my kimchi by making fried rice! It's such an easy way to have breakfast ready

I totally agree!! It’s a good way to clean out some of the vegetables and old rice you have in your fridge! And I love it even more if the kimchi is extra sour since that makes great fried rice and soup in my opinion
That looks pretty good. I'd cut out the spam and sub something less salty, but I may replicate the general idea. I can't stand not using things, and I often wind up with leftover rice.

I always use spam that has less sodium which does help lower the amount of sodium intake. But I think other options good would be ground pork, beef or chicken!
Yes, good to use a bit older kimchi. Save the kimchi juice as that’s vital to mix into the rice. Day old rice that’s chilled is best too. You don’t need to add any meat if you don’t want either. Runny egg is a must have. You can get fancy and add shredded Nori seaweed on top and a sprinkle of Ottogi sesame oil.
For the pros, put all this into an egg pillow to make Korean Omurice.
Hmm not sure how I would like this because I don't know if I like Spam. I haven't ever tried it but its one of those things that I don't know if I can bring myself to try. However I like all the other components and think this looks really tasty.
